The area's unique climate and altitude contribute to a slow ripening process, resulting in fruit rich in flavour. Harvesting was done by hand in the early hours of the morning to ensure optimal ripeness. After destemming, the grapes underwent skin contact for 3 days before pressing to separate the juice.
